Ingredients:
- 1/2 tbsp butter
- 1/4 cup diced onions
- 1 tbsp minced garlic
- 1 tbsp sliced almonds
- 1/2-1 cup of mushrooms (in fairly large chunks)
- 1/2 cup rice
- 1 cup water
- 1 tsp coriander seeds
- 2 tsp of Herbs de Provence
- 1 tsp Rosemary
- dash of salt and black pepper
Instructions:
- In a pot add the rice and water, and bring to a boil
- Once boiling turn the heat down to low and let cook for 10-15 min
- Meanwhile, in a small pan on medium heat melt the butter
- Then add the onions, garlic, and almonds, saute until the onions become clear
- Then add the mushrooms and spices, cook another 5 or so minutes, until the mushrooms start to brown
- Add the cooked rice (once the rice is cooked) mix well
- Season with salt and black pepper to taste
- Serve warm with a piece of toast
- Enjoy!
